Spruce tips are harvested in the spring, by removing the bright green buds from the ends of branches. They have a light citrusy, almost melon-like flavor with notes of pine. This vinegar captures the aromatics of fresh spruce, and is perfect for adding a bright herbal splash of flavor. The tips were foraged by Bumblebee Farm in Redmond WA, and were double fermented for 6 months. Lemony, tart, lightly resinous.
Try it with: Infused into desserts like panna cotta or ice cream, cocktails, sprinkled over grilled seafood
