Rosé wine lends itself perfectly to a light fruity vinegar, with a beautiful pink color that makes it pop.
We start with Rose from Grenache grapes grown in the Goose Gap AVA - a small Washington State appellation that produces clean, bright fruit-forward wines. We ferment it slowly for six months, open to air with no shortcuts and no added oxygen.
The result is light, fruity, and visually stunning: a blush-colored vinegar that is perfect for summer: shrubs, cocktails, fruit salads, berry preserves, light salad dressings, quick pickles, and anything that wants brightness and a little color.
Base: Grenache from the Goose Gap AVA, Washington State.
Pairings: Arugula and goat cheese salad, quick-pickled summer berries, vinaigrettes for stone fruit salads, shrubs and cocktails with seltzer and ginger syrup, light seafood dishes, drizzled over fresh strawberries.
