Merlot Red Wine Vinegar

Most red wine vinegar is made from wine that nobody would drink. This one starts with Merlot from the Goose Gap AVA, a small Washington State region in the Yakima Valley that produces wines with bright, jammy, fruity red wines. 


We ferment the wine slowly into vinegar over six months, open to air with no added oxygen and no shortcuts. The result is rich, full-bodied, and unmistakably Merlot, with more flavor than you've ever tasted in a red wine vinegar. 

Excellent for braising chicken thighs, adding depth to tomato sauce, or dressing a Greek salad.
