Winter seasonal: a stunner of a sauce that belongs on your holiday table.
I wanted a hot sauce that tasted like the holidays actually feel: rich, a little indulgent, and not afraid of excess. We start with deeply caramelized red onions and tart red apples from our friends at Collins Family Orchards, along with a rich Washington Merlot, balsamic vinegar, and warming spices. Then we added Rainier Mountain cranberries and more Southern Exposure ghost peppers than was probably advisable.
A month of fermentation turned all of that into a hot sauce with a bright pop of sweet-sourness up front, followed by a full, long-lasting burn. It's a lot going on, in the best way.
Pile it on pork, add it to a cheese plate, or swipe it on your Thanksgiving leftover sandwich. This is a limited winter batch - once it's gone, it's gone until next year.
