This vinegar packs a punch, with deep rich umami flavor and bright acidity. We start with shrooms (including blue oyster, crimini, shiitake, and lion's mane) grown by Sno-Valley Mushrooms in Duvall WA. They are fermented into a wine, followed by a second fermentation into vinegar over several months. It's intensely funky and full of flavor. 

Try it with: marinades, brothy soups, as a finishing splash for pastas,
