Serrano Mint Peach Galette

SERRANO MINT PEACH GALETTE
Pie crust (homemade or store bought)
2-3 peaches (a little firm)
1 cup whole milk ricotta
1/4 cup Serrano Mint Hot Sauce
2 eggs
Salt and pepper
Preheat oven to 400. Combine RICOTTA, HOT SAUCE and 1 tsp SALT and PEPPER. Taste and adjust, then add 1 EGG. Slice PEACHES in 1/4” slivers. Roll out DOUGH into an 10” rustic round. Spread RICOTTA mixture on base, leaving a gap around the edge. Arrange PEACHES as nicely or haphazardly as you want. Carefully fold crust edges over peaches. Beat remaing EGG and lightly brush crust with egg wash. Bake 40 minutes or until crust is browned and filling is set. Let cool for a few minutes then slice and serve! I like to garnish with fresh mint and cilantro, and a splash Basil vinegar to serve.
