Cold Spicy Tomato Noodles with Bloody Mary Broth
This is the perfect thing for hot weather - cold , refreshing noodles and a broth so spicy it becomes transcendent. You want a hefty tomato - go for a big heirloom or flavorful beefsteak.The Bloody Mary sauce amps up the umami and perfect ripe tomato flavor.
The broth makes about 4 bowls of soup, and if you have leftovers, wait to mix the noodles in until you're ready to eat.
INGREDIENTS
1 large tomato
1 tbsp dark soy sauce (or regular soy sauce)
1 tbsp soy sauce
2 tbsp rice vinegar
2 tbsp Bloody Mary Hot Sauce
1 tbsp mirin
1/2 tsp white pepper
2 cups dashi (I used dashi broth powder)
4 bundles somen noodles or another thin noodle of choice
to top: handful of cherry tomatoes, scallions, sesame seeds, soft boiled eggs
Prepare somen according to package directions. Rinse with cold water and set aside.
Grate tomato into a large bowl, discarding the skin. Add soy sauce, vinegar, hot sauce, mirin and dashi. Stir to combine and add an ice cube to chill.
To serve, place noodles in a bowl and ladle broth over. Top as desired, but I love sliced cherry tomatoes and a jammy egg, plus some sesame seeds and herbs.
