Funky, herbal, and just a bit sweet. This vinegar started with Celery leaf grown by Rising Sign Farm in Carnation, WA. After a long double fermentation, the flavor of the celery shines beautifully. Use this to add some herbal notes and flavor boost to whatever you're making - I love it to finish creamy vegetable soups. It also is amazing in cocktails and mocktails, providing a sour and savory base.
